Sauteed Vegetables Recipe

Ingredients

Eggplant

Vegetable oil

Green peppers, sliced

Carrots

Black pepper

Cinnamon

Fresh parsley finely chopped
¼
c
Fresh dill, finely chopped

Tomato, cut into wedges

Directions

  1. Cut eggplant lengthwise into 1/4" slices.
  2. Sprinkle slices with salt & let sit for 1/2 hour.
  3. Rinse, squeeze & pat dry.
  4. Heat oil over medium heat.
  5. Saute eggplant for a few minutes til soft.
  6. Remove to serving dish.
  7. Saute sliced green peppers till just tender.
  8. Place next to eggplant.
  9. Saute carrot till just tender & place next to green peppers.
  10. Season with pepper & cinnamon.
  11. Sprinkle parsley over eggplant & the dill over the carrots.
  12. Garnish with tomato & serve.
