Mjeddrah Recipe

Ingredients

Lentils, washed

Water

Olive oil

Onions, coarsely chopped

Salt

Brown rice

Directions

  1. Bring lentils & water to a boil.
  2. Reduce heat, cover & simmer for 25 minutes.
  3. Heat 2 tb oil in a skillet & saute onions & salt till the onions are transulcent.
  4. Heat remaining oil in another skillet & saute the rice for 3 minutes.
  5. Combine lentils, rice & onion, cover tightly & simmer till the lentils & rice are render, about 1 hour.
  6. You may have to add up to 2 extra cups water.
  7. Stir occasionally.
  8. Serve with a green salad.
