Fried Cabbage Recipe

Ingredients

Cabbage, shredded

Carrots, sliced into rounds

Green bell pepper, chopped

Directions

  1. Over moderate heat, fry the onion in oil until lightly browned, stirring to prevent scorching.
  2. Add tomatoes, salt & curry powder & continue to stir-fry for 3 minutes.
  3. Add cabbage, carrots & pepper & mix well.
  4. Pour in about 1/2 c water.
  5. Cover the pot, reduce heat & simmer until the liquid is abosrbed & the cabbage is still slightly crunchy. "The Africa News Cookbook"
