Ingredients

Red-skin potatoes

Bacon, diced

Directions

  1. The day before assembling this dish, boil potatoes with the skins on; let cool overnight.
  2. When ready to prepare, peel and dice potatoes.
  3. Fry bacon until crisp; set aside on paper towels.
  4. Fry potatoes in bacon fat until light brown; remove from pan, drain on paper towels and place in a 3-quart baking dish.
  5. Fry onion and celery in same skillet; drain and add to potatoes with bacon; mix gently.
  6. Pour half-and half over mixture.
  7. Bake uncovered 1 hour at 325 degrees.
  8. Makes about 16 servings.
  9. Great for large family dinners and pot luck suppers
