Red-skin potatoes

Bacon, diced

Directions
- The day before assembling this dish, boil potatoes with the skins on; let cool overnight.
- When ready to prepare, peel and dice potatoes.
- Fry bacon until crisp; set aside on paper towels.
- Fry potatoes in bacon fat until light brown; remove from pan, drain on paper towels and place in a 3-quart baking dish.
- Fry onion and celery in same skillet; drain and add to potatoes with bacon; mix gently.
- Pour half-and half over mixture.
- Bake uncovered 1 hour at 325 degrees.
- Makes about 16 servings.
- Great for large family dinners and pot luck suppers
