Creamed Leeks Recipe

Leeks (about 3 pounds)
Cleaned

Butter or margarine, divided

All-purpose flour

Milk

Salt

Directions

  1. Cut cleaned leeks into 2-inch pieces, and place in a large heavy skillet; cover and cook in a small amount of boiling water 30 minutes or until tender.
  2. Drain.
  3. Rinse quickly with cold water; drain well.
  4. Transfer leeks to a serving dish, and set aside.
  5. Keep warm.
  6. Melt 2 tablespoons butter in a heavy saucepan over low heat; add flour, stirring until smooth.
  7. Cook 1 minute, stirring constantly, until sauce is thickened and bubbly.
  8. Stir in remaining 2 tablespoons butter, salt, and pepper.
  9. Pour sauce over prepared leeks.
  10. Serve immediately.
