Cornish Under Roasted Potatoes Recipe

Ingredients

Potatoes, quartered

Onion, chopped

Salt & pepper to taste

Directions

  1. Scrub & peel potatoes if you like.
  2. Quarter them & place in a pot.
  3. Cover with water.
  4. Bring to a boil & remove from heat.
  5. Heat 2 tb oil in a roasting pan.
  6. Add onions & fry quickly for a couple of minutes.
  7. Baste each potato well.
  8. Half fill the pan with water that cooked the potatoes.
  9. Sprinkle with salt & pepper.
  10. Cover & roast at 350F for 45 minutes.
  11. Remove the lid & roast for a further 15 minutes or until the water has evaporated.
  12. Serve with your favourite roast.
