Apricot Carrots Recipe

Ingredients

Butter

Green onions, cut into julienne

Carrots, peeled, cut into julienne

Apricots, dried, cut into julienne

Honey

White wine vinegar

Water
Salt & pepper to taste

Directions

  1. Melt the butter in a large saute pan over medium heat.
  2. Add the onions and carrots and saute for 3 to 4 minutes, until the onions are translucent.
  3. Add the apricots, honey, vinegar and water and cook covered for 4 to 5 minutes.
  4. Remove from the heat and season with salt and pepper.
  5. Serve hot.
