Thick Tomato Coulis Recipe

Ingredients

Meaty, vine ripened tomatoes

tb
Butter

ts
Chopped shallots
2
cl
Garlic, chopped

tb
Shredded basil
Salt and pepper

Directions

  1. Drop the tomatoes for 30 seconds into boiling water.
  2. Remove from the water and peel them.
  3. Chop coarsely.
  4. Melt the butter in a heavy pan and saute the chopped shallot and garlic until golden but not brown.
  5. Add the chopped tomato and cook over a medium heat until the coulis is thick.
  6. Turn off the heat and stir in the shredded basil.
  7. Season to taste and set aside to cool.
