Crushed and peeled tomatoes

Bottle fruit pectin
¼

Lemon juice
Grated rind 1 lemon
Directions
- Boil tomatoes 10 minutes in an uncovered kettle.
- Stir occasionally.
- Add lemon juice and grated lemon rind.
- Heat rapidly to full rolling boil.
- Stir constantly before and while boiling.
- Boil hard 2 minutes.
- Remove from fire.
- Stir in fruit pectin.
- Skim.
- This recipe requires about 2 1/2 pounds tomatoes.
