French Stuffed Cabbage Recipe

Ingredients

Medium green cabbage

Butter or margarine

Cooked rice

Fresh bread crumbs

Carrot, sliced

Onion, thinly sliced

Bacon slices

Canned tomatoes

Directions

  1. In large sauce pan, in boiling salted water to cover, simmer whole cabbage 5 minutes.
  2. Plunge into cold water, drain well.
  3. Preheat oven to 400 degrees F.
  4. In small skillet over medium heat, in butter, cook minced onion until tender.
  5. In medium bowl, beat egg, add sausage, lamb, rice, cooked onion, garlic, crumbs, salt and pepper.
  6. Mix thoroughly.
  7. Set aside.
  8. In deep 3 quart casserole, arrange carrot and onion slices in layer.
  9. Place two 20" lengths of string crisscross on top of vegetables.
  10. Set cabbage, stem end down, on top of string.
  11. With knife, from center of cabbage, cut out 3" round core to about 2" from bottom.
  12. Fill cavity with stuffing.
  13. Lay bacon across top of cabbage.
  14. With string, tie cabbage head firmly, pulling leaves up over stuffing.
  15. Pour tomatoes around cabbage.
  16. Cover and bake 1 1/2 hours.
  17. Remove string, cut in wedges.
