Honey Spears Recipe

Ingredients

Directions

  1. Peel the cucumbers and slice in half.
  2. Scoop out the seeds.
  3. Slice the cucumbers into spears.
  4. Peel and slice the onions.
  5. Combine salt and 1 gal. water in a large glass, ceramic or stainless steel bowl.
  6. Add the cucumbers and onions and soak overnight.
  7. Sterilize 5 - 1 pint jars and lids.
  8. Drain cucumber-onion mixture.
  9. Combine vinegar, one cup water, honey, mustard seed, celery seed and tumeric in dutch oven.
  10. Cook five minutes.
  11. Add cucumber-onion mixture, heat to boiling.
  12. Ladle into hot, sterilized jars, leaving 1/8 inch headspace, and seal.
  13. Process in boiling water bath for 10 minutes.
  14. NOTE: When processing, make sure that the level of boiling water is at least 1 inch above the jar tops.
  15. Begin timing when the water returns to a boil.
