Directions

  1. Pick over and wash spinach thoroughly.
  2. Add salt and cook until tender.
  3. Do not add water.
  4. Chop the spinach very fine.
  5. Melt the butter in a saucepan, add the flour and blend.
  6. Slowly add the milk and stir constantly until mixture thickens.
  7. Combine with the chopped spinach, add the pepper and nutmeg and serve.
