Sweet Pickles (short Process) Recipe

Ingredients

Medium-sized cucumbers; cut in 1" chunks

Salt
Boiling water

Granulated sugar

Apple cider vinegar

Turmeric

Dry mustard

Allspice

Mustard seed

Celery seed

Directions

  1. Combine cucumber chunks and salt.
  2. Place in large dishpan or crock and add boiling water to cover.
  3. Let stand overnight, then drain.
  4. Mix together sugar, vinegar and spices in a large saucepan.
  5. Turn heat to high.
  6. When it comes to a boil, add the pickles and return to the boiling point.
  7. Spoon into hot steralized jars and seal.
  8. Makes 8 pints.
