Directions

  1. Green Vegetable may be baby bok choy, gai lan, small butter bok choy.
  2. Cut vegetables into 4-inch lengths.
  3. Heat pan with 2 cups water and 1/2 teaspoon salt until boiling.
  4. Add greens and cook for 1 minute.
  5. Remove, drain, and arrange on serving platter.
  6. Heat wok and add 3 tablespoons oil.
  7. Heat until very hot.
  8. Add the minced green onion and ginger; stir-fry until fragrant.
  9. Add the crab meat.
  10. Stir fry gently.
  11. Add the cooking wine and the chicken broth; bring to boiling.
  12. Mix cornstarch with 1 tablespoon water.
  13. Add to crab mixture and cook briefly, stirring, to thicken sauce.
  14. Beat the egg white until frothy.
  15. Add in a thin stream to crab mixture, stirring constantly to keep egg white from setting immediately.
  16. If desired, add 1 tablespoon oil for sheen.
  17. Remove from heat and pour over vegetable.
  18. Serve with hot steamed rice.
  19. If desired, scallops may be substituted for the crab meat.
