Kohnomono Recipe

Ingredients

Kirby cucumbers
¼
Head cabbage, core removed,
Cut into 1/2-inch pieces

Salt
Pinch of grated ginger

Directions

  1. Must be left overnight to extract water.
  2. Rub cucumbers with 1 tablespoon of the salt and wash.
  3. Slice in 1/8-inch diagonal pieces.
  4. Place in bowl, add cabbage and remaining salt.
  5. Mix.
  6. Place a weight on top to extract water, and leave overnight.
  7. To serve, squeeze out the water.
  8. Mix in ginger and serve.
