Empress Spinach Salad Recipe

Ingredients

Fresh spinach, uncooked

Bacon, crisp-cooked,
Finely chopped; reserve
Fat for dressing

Eggs, hard-cookeand chopped

Olive oil

Wine vinegar

Cl Garlic, mashed

Anchovy filets, minced or

Lemon, juice of

Directions

  1. Wine: Robert Mondavi Napa Gamay.
  2. Wash spinach carefully several times to get rid of all sand.
  3. Or buy pre-washed and trimmed fresh spinach, give it a quick wash and dry well.
  4. Place spinach in a bowl, add pimientos, bacons and eggs.
  5. Combine oil and vinegar in second bowl.
  6. Add salt, pepper, garlic, anchovies and lemon juice.
  7. Mix well.
  8. When ready to serve, discard bits of garlic; pour dressing and warm bacon grease together and stir until blended.
  9. Pour over spinach, toss well and serve.
