Cauliflower Suzuke Recipe

Ingredients

Cauliflower

Vinegar
2 ½
ts
Sugar
¼
ts
Salt
¼
c
Water
Pinch of shredded kelp
¼

Dried red pepper,
Sliced in rings

Directions

  1. A Zensai or Japanese style hors d'oeuvre.
  2. Cut cauliflower into small, bite-size pieces.
  3. Boil in water to cover for 3 minutes.
  4. In a small pan, add all remaining ingredients except kelp and red pepper.
  5. Add drained cauliflower and cook for 2 minutes.
  6. Cool.
  7. Add kelp and red pepper rings to cooled cauliflower and set for 3 hours or longer.
  8. Drain and serve cold.
