Potatoes, red or white

Chicken broth

Lemon juice

Butter

Chives, fresh, chopped

Directions
- Cut potatoes into 1-inch cubes and place in a 4-quart glass measure.
- Add broth and lemon juice.
- Cover with vented plastic wrap.
- Microwave on high 10-12 minutes, or until potatoes are fork tender.
- Stir midway through cooking.
- Let potatoes stand five minutes.
- Drain liquid and toss potatoes with butter, chives, salt and pepper.
