Mexican Spanish Rice Recipe

Ingredients

Shortening

Rice

Onion, sliced

Bell pepper, sliced

Can whole tomatoes

Clove garlic, minced

Black pepper

Water

Directions

  1. Melt shortening in large skillet.
  2. Add rice and brown.
  3. When rice is a golden brown, reduce heat and add onion, bell pepper, tomatoes, garlic and pepper.
  4. Mix well and add 1 1/2 cups warm water or enough to just cover the rice.
  5. Add salt.
  6. Cover and let simmer until almost dry.
  7. Add remaining water, cold, a little at a time, cooking over low heat until fluffy.
  8. Note: You may substitue peeled seeded green chili for the bell pepper.
