One Potato Two Potato Recipe

Ingredients

Sweet potatoe, thinly sliced

New potatoe, thinly sliced
Butter Buds, or Molly
McButter or other butter substitute

Minced onion

Pepper (or to taste)

Skim milk

Minced parsley

Directions

  1. Coat a baking dish with vegetable spray.
  2. Place one layer of sliced sweet potatoes, then one layer of new potatoes.
  3. Sprinkle with the butter substitute, 1 tablespoon of onion, a sprinkle of pepper, and repeat this layering until all potatoes are used.
  4. Pour the skim milk over the potatoes.
  5. Cover, and bake at 375 for 40-45 minutes or until potatoes are done.
  6. Uncover and bake an additional 10 minutes.
  7. Garnish and serve with fresh parsley.
