Ingredients

Butternut squash

Butter

Brown sugar
Salt
Freshly ground black pepper
Fresh chives, finely choppe

Directions

  1. Wine: Barbaresco Angelo Gaja.
  2. Preheat oven to 380 F.
  3. Peel the squashes.
  4. Cut in half and remove the seeds, then cut into 3-in. by 1/2-in. strips.
  5. Melt the butter in a medium saucepan.
  6. Add the brown sugar and cook over low heat until the sugar melts, about 5 minutes.
  7. Place the squash in an ovenproof casserole.
  8. Pour the butter/sugar mixture over.
  9. Season with salt and pepper and bake in preheated oven for 20 to 30 minutes or until tender.
  10. Garnish with chopped chives before serving.
