Stewed Eggplant Recipe

Onion, chopped

Bay leaves crumbled

Eggplant

Chili powder

Canned tomatoes

Red wine vinegar

Caraway seeds, bruised

Lemon juice

Directions

  1. Heat oil in a skillet, add onion & bay leaves & cook 4 to 5 minutes, stirring occasionally.
  2. Meanwhile, peel the eggplant, slice it then dice.
  3. Add pieces to skillet.
  4. Add rest of the ingredients.
  5. Raise heat till mixture begins to simmer then cover, reduce heat & simmer 20 minutes til the eggplant is very tender.
