Dried red chiles, broken into pieces by hand

Mustard seeds

One-inch cube fresh ginger, peeled and minced

Fresh green chiles, minced

Onion, thinly sliced
Salt to taste

Fresh lemon juice

Directions

  1. Cut potatoes into 2-inch cubes, boil until tender and drain.
  2. Add half the turmeric and mash lightly with a large fork.
  3. It should still be quite chunky.
  4. Keep warm.
  5. Heat oil in a medium saucepan or skillet until hot.
  6. Turn heat to golden, add ginger and fresh green chiles.
  7. Stir for 3 minutes.
  8. Add sliced onion, salt and remaining turmeric.
  9. Cook until onion is soft and transparent.
  10. Add a few drops of water if mixture looks too dry.
  11. Add to potatoes and mix well.
  12. Add lemon juice.
  13. Serve warm.
