Cold Potato Salad Recipe

Ingredients

Potatoes; large * ;boiling water

Salt

Onion; medium, minced

Vinegar

Mustard; prepared

Directions

  1. * Potatoes should be peeled and quartered.
  2. In medium saucepan cook potatoes in boiling salted water until tender.
  3. Drain, reserving 3/4 cup of potato water.
  4. Dice potatoes.
  5. Add oil and minced onion; toss gently.
  6. In small saucepan bring the 3/4 cup potato water to a boil; pour over potatoes and onion.
  7. Keep at room temperature for 2 to 3 hours.
  8. Stir in vinegar, mustard, sugar, and dillseed.
  9. Potato salad will be creamy.
  10. Serve at room temperature.
