Directions
- Serve with shrimp creole.
- Rinse and scrub artichokes thoroughly under running water.
- Remove strings from roots.
- Into a large pot, place steamer basket and water.
- Water in the bottom of the pot should be about 1 inch deep.
- Over a medium flame, bring water to a boil.
- Place artichokes in basket.
- Cover tightly and let steam on medium flame for 15 minutes until artichokes can be pierced with a fork.
- Do not overcook.
- Add additional water if necessary to keep the level about 1 inch in bottom of pot.
- Remove artichokes when done.
- Cream cheese sauce: In a small bowl, with a electric beater, blend cream cheese and milk until all lumps are gone.
- Keep sauce at room temperature.
- To serve: Place hot artichokes on a serving dish.
- Pour sauce over them and serve immediately.
