Coarsely Chopped Cucumber

Plain Low Fat Yogurt

Crumbled Feta Cheese

Chopped Fresh Parsley

Directions

  1. Combine Potatoes & 5 C.
  2. Water in A Large Saucepan; Bring To A Boil.
  3. Cover, Reduce Heat & Simmer 15 Min.
  4. OR Till Tender.
  5. Drain Potatoes & Chill.
  6. Cut Potatoes Into 3/4 in.
  7. Cubes.
  8. Combine Potatoes, Cucumber, & Tomatoes in A Large Bowl.
  9. Set Aside.
  10. Drop Garlic Through Chute in Processor With Processor Running.
  11. Process About 3 Sec.
  12. OR Until Garlic Is Finely Chopped.
  13. Add Yogurt &Feta Cheese, Oregano & Rosemary.
  14. Process Until Smooth.
  15. Add Yogurt Mixture To Reserved Potato Mixture; Toss Gently To Coat.
  16. Garnish With Parsley, Olives & Onion Rings If Desired.
  17. Cover & Chill Thoroughly.
