Fusilli Verde With Broccoli & Red Bell Pepper Recipe

Red bell pepper, chopped

Olive oil

Broccoli, cut into florets, - stems peeled & diced

Blanched peas

Tomatoes, chopped
Cayenne, to taste

Thyme

Fusilli verde
Salt, to taste

Directions

  1. Lightly saute the garlic & red bell pepper in the olive oil, then add the broccoli & a few tablespoons of water.
  2. Cover & cook over high heat for a minute or two until just tender.
  3. Add the peas & tomatoes, season with cayenne & thyme, cover & cook for 5 to 10 minutes.
  4. Meanwhile, cook the pasta until *al dente*.
  5. Drain & toss with the sauce.
  6. Season with salt if needed & serve.
