Creole Red Beans And Rice Recipe

Ingredients

Beans, red; dried

Sausage, smoked link; cut 1"

Ham, smoked; cubed

Onion; chopped

Tomatoes; undrained (16oz)

Garlic clove; crushed

Salt
Pepper; to taste
Rice; hot, cooked
Directions
- Sort and wash beans.
- Cover with water, and bring to a boil; cover and cook 2 minutes.
- Remove from heat, and let stand 1 hour.
- Bring to a boil; reduce heat, and simmer until beans are almost tender (1-1/2 to 2 hours).
- Add remaining ingredients except rice to beans; continue cooking, stirring occasionally, until beans are tender and a thick gravy is formed.
- If necessary, add more water to keep beans from sticking.
- Serve over rice.
