Ingredients

Asparagus, trimmed

Head of cauliflower, chopped

Ribs celery, chopped

Chopped parsley

Lemon juice

Swiss cheese, sliced

Directions

  1. In a medium saucepan, melt butter over low heat.
  2. Add flour and cook paste several minutes while whisking.
  3. Add milk, increase heat and bring almost to boil.
  4. When milk mixture thickens slightly, add parsley, cook for two minutes and remove from heat.
  5. Thinly slice zucchini and carrot.
  6. Coarsely chop cauliflower.
  7. In a medium saucepan, cover asparagus, carrot and cauliflower with an inch of boiling water.
  8. Simmer over medium heat for 7 minutes.
  9. Turn vegetables into colander and rinse with cold water for two minutes.
  10. Heat oil in medium saucepan.
  11. Add onions and garlic.
  12. Saute 2 minutes.
  13. Add zucchini, broccoli and celery.
  14. Season with salt and pepper.
  15. Add lemon juice and cook for 8 minutes.
  16. In medium baking dish, combine both vegetable mixtures and sauce.
  17. Mix well.
  18. Cover with cheese slices and bake for 15 to 20 minutes at 350F until heated through.
