Head of cauliflower, chopped

Lemon juice

Swiss cheese, sliced
Directions
- In a medium saucepan, melt butter over low heat.
- Add flour and cook paste several minutes while whisking.
- Add milk, increase heat and bring almost to boil.
- When milk mixture thickens slightly, add parsley, cook for two minutes and remove from heat.
- Thinly slice zucchini and carrot.
- Coarsely chop cauliflower.
- In a medium saucepan, cover asparagus, carrot and cauliflower with an inch of boiling water.
- Simmer over medium heat for 7 minutes.
- Turn vegetables into colander and rinse with cold water for two minutes.
- Heat oil in medium saucepan.
- Add onions and garlic.
- Saute 2 minutes.
- Add zucchini, broccoli and celery.
- Season with salt and pepper.
- Add lemon juice and cook for 8 minutes.
- In medium baking dish, combine both vegetable mixtures and sauce.
- Mix well.
- Cover with cheese slices and bake for 15 to 20 minutes at 350F until heated through.
