Beef Ragout Recipe

Ingredients

Beef bottom round steak, with bone, cut 1" thick

Dried thyme leaves

Onion, cut into wedges

Cloves garlic, crushed

Ready-to-serve beef broth (1 can)

Dry red wine (optional) or water

Carrots, thinly sliced

Fresh mushrooms, sliced

Hot, cooked noodles

Parsley, chopped (optional)

Directions

  1. Cut steak into 1-inch pieces; cut each in half.
  2. Reserve bone.
  3. Combine thyme, salt and pepper; sprinkle evenly over beef.
  4. Brown beef in hot oil in large skillet over medium-high heat.
  5. Stir in onion and garlic; continue cooking 1 to 2 minutes.
  6. Add broth, wine (or water) and steak bone.
  7. Reduce heat; cover tightly and simmer 1 1/4 hours.
  8. Stir in carrots and mushrooms; continue cooking, uncovered, 40 to 45 minutes, or until carrots are tender and sauce thickens slightly.
  9. Discard bone.
  10. Serve over hot, cooked noodles.
  11. Garnish with parsley, as desired.
