Italian Carrots Recipe

Ingredients

Bunches carrots; peeled

Garlic; whole

Salt;
Fresh Italian parsley; chopped
Salt & pepper to taste;

Directions

  1. Place whole carrots, garlic and 1 teaspoon salt in a medium saucepan.
  2. Cover with water.
  3. Bring to a boil, cover, and simmer until the carrots are crisp yet tender, about 5 minutes.
  4. Drain and discard the garlic.
  5. Arrange on a platter.
  6. Sprinkle with chopped parsley (I keep frozen in the freezer as well as cilantro) and salt and pepper to taste.
  7. Serve at once.
  8. Food Exchange per serving: 1 VEGETABLE EXCHANGE.
