Fresh Squash And Onion Recipe

Ingredients

Squash; yellow

Onion; finely chopped

Salt;

Sugar;*

Water

Butter (or marg. ); melted

Directions

  1. * Use your favorite sugar substitute Wash squash and cut into 1-1/2" slices.
  2. Place in saucepan with onion, salt, and sugar; add 1/2 cup water.
  3. Cover tightly and steam about 10 minutes.
  4. Add butter and stir gently.
  5. Food Exchange per serving: 1 vegetable exchange, (make it work) NO'S NOTE: This would be excellent way to fix squash for the diabetic.
  6. All so I would cut down on the margarine.
