Chopped onion

EACH dried basil, thyme, marjoram, and cumin

Cooked beans

Cooked brown rice

Eggs, slightly beaten

Low fat cottage/ricotta cheese (or combination)

Crumbled Feta cheese (optional)

Soy sauce
Salt
Black pepper
Cayenne to taste

Tomatoes, sliced

Grated parmesan cheese

Fine dry bread crumbs

Directions

  1. Preheat oven to 350F.
  2. Heat oil in large skillet; saute onion, garlic and mushrooms until onion is nearly soft.
  3. Add all remaining ingredients except final three.
  4. Mix well and spread mixture in a large greased or sprayed shallow baking dish.
  5. Arranged tomato slices over the top.
  6. Mix together parmesan and crumbs and sprinkle over tomatoes.
  7. Bake for 40 minutes.
  8. Makes 8 servings.
