Rocky Road Carmel Corn Bars Recipe

Ingredients

(1/2 stick) margarine

Package minature marshmallows 1/2 cup semiswet chocolate chips

Caramel corn (Can use Joel Murphy's recipe for this) 1 cup peanuts

Directions

  1. Microwave margarine in a microwave safe bowl on high power 45 seconds, or until melted.
  2. Add 5 cups marshmallows and chocolate chips.
  3. Toss to coat with margarine.
  4. Microwave 1 1/2 minutes or until smooth when stirred, stirring after 45 seconds.
  5. Combine caramel corn and peanuts in a large bowl.
  6. Pour melted mixture over caramel corn and peanuts and toss to coat.
  7. Stir in remaining marshmallows.
  8. Press into a greased 13 by 9 inch baking pan.
  9. Cool and cut into squares.
  10. Conventional cooking directions: Melt margarine in a saucepan over low heat.
  11. Add 5 cups marshmallows and chocolate chips; stir until melted and well blended.
  12. Continue as directed above.
