The Coach House Salad Recipe

Ingredients

Cl Garlic, peeled and cut

Light olive oil

Heads boston or romaine lett
Washed and cut into
Bite-size pieces

Ripe tomatoes, cubed

Fresh scallions, cleaned
And chopped

Black olives (greek or
Italian)

Crumbled feta cheese

Peeled and thinly
Sliced

ts
Oregano

Red wine vinegar

tb
Chopped parsley

Directions

  1. Sharp and aromatic.
  2. Crisp.
  3. Sprinkle the amount of salt you desire for your salad in a large wooden bowl.
  4. Rub the garlic halves vigorously against the bowl for one minute.
  5. Discard what is left of the garlic.
  6. Combine the lettuce, tomatoes, scallions, olives, cheese, cucumber and oregano.
  7. Add the vinegar and parsley and toss.
  8. Add the olive oil and pepper and toss again.
  9. Serve immediately.
