Sweet Potato Casserole Recipe

Ingredients

Sweet potatoes

c
Butter 5. 3-oz. can evaporated milk
1
Orange (grated zest only)
¼

Sherry

Brown sugar

Egg whites

Pecans chopped fine

Melted butter

Directions

  1. Many variations exist; this one is light.
  2. Cook potatoes in as little boiling water as possible until tender.
  3. While still hot, peel.
  4. Place in large mixing bowl and mash well.
  5. Beat with electric mixer at medium speed and gradually add butter, milk, orange zest, sherry and brown sugar.
  6. Beat egg whites until stiff and gently fold into potato mixture.
  7. Pour into buttered casserole.
  8. Sprinkle top with chopped pecans that have been mixed with melted butter.
  9. Bake at 350 degrees for 30 minutes.
