Red Beans & Rice Recipe

Ingredients

Red beans, small

Ham hocks or smoked

Onion yellow; large (peeled. and chopped)

Celery stalks; (chopped)

Green pepper; chopped

Bay leaves

Garlic cloves; large, chopped

Margarine
Pepper to taste

Worcestershire sauce
Tabasco to taste
Salt to taste

White rice; cooked

Directions

  1. Soak the beans overnight in ample water.
  2. The next day drain the water from the beans, and place in a heavy kettle.
  3. Add the ham, onion, celery, parsley, bay leaves, and garlic, and add water to the pot barely to cover the contents.
  4. Bring to boil, and then turn to a simmer.
  5. Simmer, uncovered, for 2 hours, being careful that the beans do not stick or become too dry.
  6. You may have to add a little water.
  7. After the initial two hours of cooking, add the margarine, pepper, Worcestershire, and Tabasco to the pot.
  8. Continue cooking for 1 more hour, this time with the lid on the pot and the heat quite low.
  9. Correct the seasonings.
  10. You may wish to add a bit of salt, but do not add salt until this point because salt cooks out of the ham hocks or ham and seasons the dish well.
  11. Serve over white rice with a nice green salad and a good white wine or beer.
