Artichokes With Rosemary Sauce Recipe

Ingredients

Globe artichokes

Margarine or butter

Dried rosemary leaves,

Directions

  1. * Any herb can be substitute for the rosemary.
  2. Prepare and steam artichokes as directed.
  3. While artichokes are steaming, heat margarine until melted.
  4. Stir in rosemary and lemon juice.
  5. Pluck leaves out one at a time.
  6. To serve, dip base of leaf into rosemary mixture.
  7. Don't let the appearance of an artichoke mystify you; they are very easy to eat.
  8. Pull out a leaf and draw it between your teeth, scraping off the meaty portion.
  9. Continue until all the leaves are gone and you see the small center cone of light green leaves.
  10. Pull off, or cut the leaves from the cone, slice off and discard the fuzzy choke and a meaty portion will be visible.
  11. Savor this final treat - it's the heart of the artichoke.
